Ingredients

  • 2 Lbs. Langostino or Lrg. Shrimp, Peeld, cleaned and deveined
  • 3 Multi-colored Sweet Peppers, Sliced in 1-inch chunks
  • 1 Lemon, Halved then cut in quarters
  • 2 Limes, Halved then cut in quarters
  • 1 Cup Rice, Cooked
  • 12 Oz. Black Beans, Rinsed & Drained, the added to the cooked rice
  • 1 Tsp. Chili Powder, added to rice mixture
  • 1 Navel Orange, Peeled and Sectioned

Directions

  • 1Alternate Langostino on wet wooden skewers with pepper sections and lemon & lime sections
  • 2Marinate in Orange Juice for 30 minutes-1hour
  • 3Fire up the grill on high heat
  • 4place orange sections on a grate with fine openings. Place on grill and grill 10 minutes flipping once
  • 5Grill kebobs for about 15-20 minutes or until shrimp is cooked
  • 6Serve over black beans and rice, you should get about 6 kebabs off this recipe
  • 7Arrange orange sections around the mound of rice and kebabs and serve.
